Sambal Goreng Krecek


Sambal Goreng Krecek is one of Gudeg Yogyakarta complementary dishes to add flavor, make it more tasty and fragrant.

Ingredients :
  • 300 grams of crackers krecek special dishes
  • 200 grams of tolo beans (wash)
  • 100 ml cooking oil (for frying)
  • 100 grams of red chili is great (boiled and finely blender)
  • 50 grams of green chili
  • 3 bay leaves
  • 2 lites coconut milk (separate liquid and thick coconut milk)
  • 1 teaspoon tamarind
  • brown sugar to taste
  • salt to taste
  • enough water


Subtle Spices :
  • 12 cloves garlic
  • 12 red onions
  • 6 cm galangal (crushed)
  • 2 stalks lemongrass (crushed)


How to Make :
  1. Boil water until boiling. Enter Tolo beans into the boiling water. Let stand for 2 hours until beans Tolo expands.
  2. Tolo beans boiled for 10 minutes, drain. Rinse until the water is clear rinsing.
  3. Krecek soak until soft. Juicing by way of both hands clasped together so krecek not destroyed. Rinse and wring until all the dark brown oil out and the water is clear.
  4. Heat oil, saute red chili that has been pulverized until the oil out and red. Set aside.
  5. Take a little red chili stir remaining oil, put spices puree (garlic, red onions, galangal and lemongrass). Stir-fry until fragrant.
  6. Pour liquid milk and bay leaves. Cook until boiling, put brown sugar and salt to taste, mix well.
  7. Enter Tolo beans and cook until done.
  8. Enter krecek and thick coconut milk, coconut milk, stirring constantly so as not to break, after somewhat thickened gravy, green chili enter. Cook again until sauce thickens, shortly before the lift, add sour water. Mix well.
